Culturing Your Vegan Butter

You have the option to make some homemade yogurt for this butter recipe- which is something I recommend to help you save money and have a preservative free yogurt. It’s super easy to make if you have an Instant Pot since it literally has a yogurt setting. Strain your yogurt so it is a thick Greek yogurt texture for the best results.

If you need your butter right away, you can always use premade unsweetened yogurt! Make sure it isn’t flavored!
For the best result go with a soy yogurt as the protein in soy is pretty similar to the milk proteins you would find in traditional milk. This matters because you will have a better result browning it and whipping it. That doesn’t mean you can’t use oat, almond, hemp, or hazelnut yogurt! All that means is the protein balance will be off and it could affect the structure of the butter. It will still be delicious and great for spreading and baking.

To make this butter we combine yogurt with oil and miso, which is why I bring up yogurt right away. The butter will continue to culture from the yogurt as it sits in the fridge. Miso is another live culture that will influence the flavor of the butter. You’ll notice this recipe only calls for 1/2 tsp of the miso, you can add more if you want a saltier, deeper flavor.

Molds For Your Butter

After you blend up all the ingredients to make the melted butter you will pour it into a mold. This will shape your butter. You can use a silicone mold or a small loaf pan that you line with parchment paper or a silicone sheet like pictured below. A small spring form pan also works great as a butter mold.

Instructions

  • Add everything to a blender, blend on high for about 1 minute
  • Pour the melted butter into a silicone mold.
Alternately you can line a small loaf pan, cupcake tin, or (whatever shape you want your butter to in) with parchment paper.
The parchment paper makes the butter much easier to remove once it's hardened. Parchment paper is not necessary for silicone molds.
  • Let harden in the refrigerator for about 1 hour, remove and while the butter in the parchment paper roll it out into a log
