Vegan Seitan Gyro

This vegan seitan gyro is one of my favorite ways to use my seitan beef, once all the components are made, it’s a quick lunch.
Think of making the vegan tzatziki, pickled red onions, salad, and seasoned seitan as meal prep. If you pack up all the components it can make a great packed lunch!

High Protein and Delicious

These vegan seitan gryo wraps are made with Seitan Beef Bites– I really recommend you giving that recipe a try!
It’s much more affordable than the premade vegan meats you can get from the grocery store, and they taste better.
You can also use this Seitan Beef Recipe, it’s a leaner recipe that also tastes fantastic.

That being said, I get it- they take a few hours to make and you have a busy life. You can always swap them out for soy curls that have been hydrated in a vegan beef broth, or your favorite kind of vegan protein (Gardien, Beyond, and Meatless Farms are all brands I like for days when I don’t have seitan prepped).

Shortcuts for Making Vegan Seitan Gryo

This recipe has you make pickled red onions, Tzatziki, salad, in addition to preparing the seitan gyro meat.

While I recommend having pickled red onions for this recipe (you’ll be left with lots of leftover that is sooo good in other sandwiches, wraps, buddha bowls, and even sushi), the pickled red onions are optional. You’ll still have a delicious wrap without it. Often when I order vegan gyros they’ll use cucumber pickles or pickled radish in it’s place.

Homemade fresh tzatziki is hard beat because it is so delicious in this gryo! However you could always swap it for a tahini dressing or even a vegan ranch could be good.

The salad is another way to add more flavor into your gyro, but again, it’s optional. Most often your vegetables will be unseasoned when you order a gyro from a restaurant. I find the addition of the dressing and olives a fantastic way to add in more lovely flavor and texture.

Vegan Seitan Gyro

This delicious Vegan Seitan Gyro has all the flavors of the Mediterian, but it made vegan!
This recipe uses seitan beef bites that offer a meaty and high protein bite and is flavored in a delicious Lebanese style seasoning. For balance tangy pickled red onions are added along with fresh Tzatziki and a flavored salad.

Ingredients

Seitan Beef Gyro Meat

  • 4 oz Seitan Beef Bites
  • 1 tbs Lebanese Spice Blend (equal parts cumin, paprika, coriander, cinnamon, nutmeg, black pepper, cloves, salt, cayenne pepper, cardamom)
  • 1 clove Garlic
  • Oil for frying Any oil you prefer

Pickled Red Onion

Tzatziki

  • 1 Large Cucumber
  • ½ Cup Soy Yogurt or any variety of plant-based yogurt you prefer
  • 1 large Lemon
  • 1 tbs Olive Oil
  • 1 tbs Dill
  • 1 tsp Salt

Salad

  • Mixed Greens Argula (rocket), spinach, lettuce, ect
  • ½ Cup Olives Marinated in olive oil and spices if possible
  • 1 tbs Olive Oil
  • 1 tbs Red Wine Vinegar
  • 1 dash Black Pepper

Pita Assembly

  • 2 Pitas
  • 1 Tomatoes Sliced thinly
  • ½ Cucumber Sliced thinly

Instructions

Pickled Red Onions

  • Slice the onions thin and then pour boiling water over them.
  • Let it soak for ten minutes. Strain away the water (saving 1 cup)
  • Mix together the vinegar, reserved water, sugar, and salt and marinate the onions in it.

Tzatziki

  • Grate your cucumber and squeeze out the juice.
  • Add in the rest of the ingredients and mix.

Salad

  • Slice the olives and mix everything together

Seitan Beef

  • Grate the garlic, add some oil to a pan and add the garlic on medium high heat.
  • Toss in the seitan and pan fry for 3 minutes. Add in the seasonings and fry for another minute.

Assemble

  • Dollop tzatziki over pita, add seitan, salad, pickled red onions, sliced cucumber, sliced tomato, and more tzatziki if you wish!
