
@jess.flowers Part 4 of 4 seitan beef recipes I made from $5 worth of bread flour. This seitan gyro is one of my favorite ways to use my seitan beef, once all the components are made, it’s a quick lunch. Think of making the tzatziki, pickled red onions, salad, and seasoned seitan as meal prep. If you pack up all the components it can make a great packed lunch. Recipe: Pickled Red Onion: 2 Red onions 1/2 cup vinegar 1/4 cup sugar 1 tbs salt Tzatziki: 1 large cucumber 1/2 cup soy yogurt 2 cloves garlic 1 large lemon 1 tbs olive oil 1 tbs dill 1 tsp salt Salad: 2 cups mixed greens 1/2 cup olives 1 tbs olive oil 2 tsp black pepper Seitan beef: 6 oz seitan beef bites (from previous recipe) 1 clove garlic 1 tbs Lebanese spice blend (equal parts cumin, paprika, coriander, cinnamon, nutmeg, black pepper, cloves, salt, cayenne pepper, cardamom) Oil for frying Assembly: Pita Sliced Cucumber Sliced Tomato Directions: Pickled red onions: slice the onions thin and then pour boiling water over them. Let it soak for ten minutes. Strain away the water (saving 1 cup) Mix together the vinegar, water, sugar, and salt and marinate the onions in it. Tzatziki: Grate your cucumber and squeeze out the juice. Add in the rest of the ingredients and mix. Salad: slice the olives and mix everything together Seitan: Grate the garlic, add some oil to a pan and add the garlic on medium high heat. Toss in the seitan and pan fry for 3 minutes. Add in the seasonings and fry for another minute. Assemble: Dollop tzatziki over pita, add seitan, salad, pickled red onions, cucumber, tomato, and more tzatziki if you wish!
