Mince the bacon, onion, and shallot
Heat up a frying pan to medium/high heat and add the 2 tbs coconut oil, then fry the mined bacon. Fry it for 4-5 minutes or until the edges are crispy.
Reduce heat to low/mediumPour in the ½ cup brown sugar, ⅓ cup maple syrup, ¼ cup balsamic vinegar, ¼ cup bourbon, the 2 tbs apple cider vinegar, the 1 tbs of expresso powder, and a pinch of red chili flakesMix everything well and cook for 10 minutes Use immediately or store in the refrigerator in a sealed jar for up to 1 week
